Use 1-Wire to link multiple sensors together and handle them in an ESP32 that can send them to Node-Red on a Raspberry Pi by some communication method (example MQTT). Good example of a 1-Wire device is the DS18B20 Temperature Sensor. Maybe too much for 1 tutorial, but use Node Red to output the data and send it to a gauge like those found in OpenPlotter dashboards (Signal K, Kip, etc)
