The Dronebot video for putting together a Mearm shows an i/o shield for potentiometers toward the end of the video, is there a part Number so I can purchase one?

It's hard to tell from the pictures, but there's an URL in the followup replies that no longer exists. I looked it up on Amazon and the result was ...
"https://www.amazon.ca/Sensor-Expansion-Compatible-Arduino-Programming/dp/B08R419RLG/ref=sr_1_5?keywords=Arduino%2BSensor%2BShield%2Bv5.0&qid=1639249481&sr=8-5&th=1"
You'll have to select the URL from inside the quotes, for some reason Amazon URLs don't co-operate well with the forum.
Hope this helps.

That comes up with a sensor shield
Yes, that's right. If you look at the video about 41:36 you get about the best view that I could find. Is that the shield you were looking for ?
